This thick sweet grapey character of ice wine makes it a natural after dinner desert wine. It also makes it a natural partner to our white tea, a Pai mu tan from Fujian. This tea is often described as jammy, with sweet notes ヨ perfect for layering with the sweet icy wine. Note sweet velvety tones highlighted by hints of grape.
Hot Tea: This tea is best enjoyed by pouring 180F/80C water over the leaves (1 tsp per cup) for 3 minutes (longer=stronger). Don't remove the leaves but rather add more hot water until the flavor is exhausted. Can be infused repeatedly 3 times using higher temperatures and shorter infusions each time. Iced Tea: Pour 1 1/4 cups of hot water over 6 teaspoons of tea and steep for 5 minutes. Pour into pitcher while straining leaves, add ice and top up with cold water to make a quart of iced tea. Garnish and sweeten to taste. |

According to Chinese folklore, peaches are a potent symbol of long life, conferring
longevity on all those who eat them. This belief stems from ancient legends that tell us the
fruit was a favorite of the 8 Immortals, divine beings who populated Chinese myth. So, if
peaches stand for long life, the Yin of our equation. The Apricot's are the Yang. This
combination of peaches and apricots together is heavenly. It's blended with a top grade Pai
for a delicate hint of citrus finish with faint lingering notes of honey layered over the
thick jammy character of this full-bodied tea.

One of the more compelling outcomes of monastic monks exerimenting with herbs, spices and fruit throughout the middle ages: A mixture of grenadine and vanilla, a flavor combo
weメve grown enamored with and have come to call Monks blend in honor of the monastic
traditions. In this variation of this wonderful tea weve added our all-natural flavoring to
a superb white Pai mu tan from Fujian province in China. The resulting cup exhibits a full

natural flavoring resulting in a cup with a full body with underlying notes of citrus and
wickedly delicious cream flavor complimenting the subtle taste of this white tea. A milder
